Instructions:

Bring steaks to room temp. Season well.

Preheat grill to high.

Sear each side 3–4 minutes.

Move to indirect heat and cook another 4–6 min until 130°F internal.

Instructions:

Preheat oven to 275°F.

Sear steaks 2 min per side in hot pan. Add garlic and herbs to finish.
