Instructions:

Preheat oven to 275°F.

Rub roast with oil, salt, pepper, and garlic powder.

Place on a rack in a shallow roasting pan.

Roast until internal temperature reaches 130°F (medium-rare), about 20–25 min per lb.

Remove from oven, tent with foil, and rest 15 minutes.

Ingredients:

1 onion, chopped

3 carrots, sliced

3 garlic cloves, minced

2 cups beef broth

1 cup red wine (or additional broth)

1 tbsp tomato paste

2 sprigs fresh thyme or 1 tsp dried

1 bay leaf

Salt and pepper to taste
Instructions:

Preheat oven to 300°F.

Heat oil in a Dutch oven. Brown roast on all sides. Remove.
